1.) Is it possible to make such changes:
 132

2.) I think "My Profile Views" means "My Guests". But how to lock this field, to be able for myself only.

you can set permissions in

CMS/ page permissions

set the profil one to moderator or admin .

problem is that i don´t know if the users can view there own profils still then

If you are using latest RC, you can just add this code to what you want to be reserved for admins.

Please note that this code will work only in TPL files!!!

...and moving those fields around is totally possible, obviously as seen in your picture.
