And to make some of the default ones that they have to fill out in order to register with out making new ones? If i have to make new ones then I woudl like to remove the old ones.

Rename Phone number to Office number
remove some options of the Extra Profile Information, Occupation and interest.
Would like to have selector buttons for a list of items in the profile, maybe a custom tab under profile for this to allow the user to select multiple items showing certification or training in selected fields.

If you don't want them to show up you should consider removing them from the TPL file (removing the PHP code isn't easy).
For those you may want to change, you can just change the lang var assigned... for example PHONE NUMBER may become CERTIFICATION NUMBER.
You need to edit lang_main.php for these.

So if I take
$lang['Occupation'] = 'Occupation';
and change it to
$lang['Occupation'] = 'Line of business';
Is that what is needed to do this? And I suppose if I want to make changes to others, I would have to make sure to use on items that would be the same. So could not use a Field that would looks for a date as a text field?
